Yeast Free Bread
Amongst yeast free bread recipes, I believe this is one of the most tasty ones as it is stuffed with fresh cheese.
This yeast-free bread recipe is easy and needs little time to be prepared.
You’ll need (4 people):
• 0.8 cup of Manitoba wheat flour (the American flour) • 0.4 cup of water • 1 cup of fresh Italian cheese • 1 coffespoon of salt |

• 5 tablespoons of extra virgin olive oil plus oil to spread over the bread
Put the flour, the salt, the water and the extra virgin olive oil into the bread machine bowl. Choose a program just to work the dough, without baking it.

This yeast free bread needs less work than a common bread, but I believe the amount of work a machine does cannot be done manually. I do always use the machine, as it gave me much better results. |

Pay attention while it begins to mix the ingredients and add a little water if the dough is too dry; or a little flour if you feel it is too sticky. It's easy; the trick is to add very small amounts of water or flour, and you will undertsand when it's the right proportion.
After having worked the dough and it became homogeneous, leave it rest for half an hour.
Then turn your oven into maximum temperature (250°C or 482°F).
Divide the dough into two and roll it out until it reaches the pan's size approximately. Place it on the oven pan and then put the cheese, cut in pieces on it, leaving the borders free.
Roll the other half out into approximately the same size and place it on the cheese layer. Attach the borders using your fingers, closing it. Then punch it with a fork to let the air from the inside.
Use a kitchen brush to spread the extra virgin olive oil and add some ground marine salt (it's even better if you use Fior di Sale).
Let it cook for about 10 minutes, until the borders are lightly coloured. Take it out of the oven, wait a couple of minutes and then cut it in squared pieces and serve. We just love it ;-)
