
Tomato Soup Recipes
Easy tomato soup recipes: try this cauliflower soup with tomato and the basil one. These tomato soup recipes are healthy and easy to prepare.
I don't know why, but the cauliflower one seems to be diuretic and makes me feel lighter and so it became one of my favourite soups. Cauliflower soup recipe with tomatoIngredients (4 people): • 4 tablespoons of extra virgin olive oil • 1 minced onion • 2 minced garlic gloves |
• 1 tablespoon of tomato puree • 1 cauliflower • broth • 2 cans of peeled tomatoes |

How to prepare:
Put the oil into a deep pan, then add the minced onion and garlic. As soon as it begins to get coloured, add the cauliflower in pieces. Mix it all, add the stock (or the cube), add the tomatoes and the farro. Cover it with water, salt and let it cook.
Stir it once in a while, smashing the cauliflower with a wood spoon against the pan side (it is just how I prepare it, as I prefer smaller pieces of cauliflower to mix well with farro grains).
There are many tomato soup recipes that are a result of improvisation. This "poor" recipe is one of the tastiest, especially during cold weather: recipe for potato soup that comes even better if you use fresh tomatoes (or even canned ones) instead of the puree.
p.s.- Farro is is a food product consisting of the grains of certain wheat species in whole form.
Tomato basil soup recipe
Ingredients (4 people):
• 2,5 cups of fresh tomatoes • a teaspoon of minced thyme • 3 sliced garlic cloves |

• 1 tablespoon of tomato puree
• a handful of fresh basil
• 2 minced celery stalks
• 2 minced leeks
• 2 minced onions (better if white ones)
• 1 can of peeled tomatoes
• 1.5 cups of broth
• marine salt
How to prepare:
Pre-heat your oven to 482°F or to its maximum. Put the fresh tomatoes on a pan, add a thread of olive oil, garlic and thyme and let them cook for about 10 minutes.
In the meanwhile, warm some olive oil in a casserole and add the leek, the celery and the onion. Let them cook for a while without colouring, then add the tomato puree and the stalk of the basil (not the leaves).
Add the peeled tomatoes with their juice, the grilled tomatoes and the broth. Let them cook in low gas for about half an hour.
Sift it out, better if using a stainless steel food mill, eliminating skins, peels and stalks. Then put it back into the pan, re heat it and salt at your pleasure.
Serve it hot with the fresh basil leaves cut at the moment. Quite all tomato soup recipes match well with some fresh basil leaves added before serving.
