Tomato pie recipe
Tomato pie recipe, prepare a tasty vegetarian meal with this recipefor tomato pie.
Ingredients (4 people):
• about 4 or 5 cups of cherry tomatoes
• a thread of good quality olive oil
• thyme
• salt
• puff pastry
• a buffalo mozzarella (about 0.14lbs)
How to prepare:
Wash the tomatoes carefully to keep them with their stalk. Dry them and place them on a pan (better if you cover the pan with oven paper).
Preheat your oven to its maximum.
Add a thread of extra virgin olive oil (I will never stress enough remembering that the quality of the ingredients is so important for the final result) and some thyme (better if fresh - otherwise dried will be ok) and put them into the oven. Do not add salt, otherwise they will water.
Take them out of the oven. Adjust its temperature to regular instead of maximum.
Take a non adherent round pan and place carefully the tomatoes face down (you will serve it the other way). Fill the pan and add raw tomatoes if the roasted ones shouldn't be enough.
Take the puff pastry and cover them, taking care of closing the borders carefully with your fingers.
Place it inside the oven and let it cook for about 20/30 minutes.
Take it out of the oven, wait for a while and then remove it from the pan carefully. It will then have the tomatoes on top.
You can prepare a green tomato pie recipe just using green instead of cherry tomatoes.
Salt it and add the buffalo mozzarella in small pieces over it. Serve and buon appetito!
