Roasted Eggplant Recipe

This roasted eggplant recipe looks like an eggplant bruschetta with fresh tomato as the topping, making of it a light recipe where you save the calories of the bread.

You’ll need (4 people):
• 4 medium eggplants
• 4 tablespoons of extra virgin olive oil
• Salt
• Pepper freshly grounded
• 10 to 12 tomatoes
• A handful of fresh basil leaves
• Oregano (optional)
• A clove of garlic well chopped

How to prepare it:
Wash and peel the eggplants. Cut them in slices and place them on the oven plate. (I use a baking paper sheet under them to avoid attaching).

Put 2 tablespoons of olive oil into a small bowl and, using a kitchen brush, spread it over the eggplant slices. Add salt and pepper.

Cook it into pre-heated oven (200°C/392°F) for about 20 minutes. Open the oven ,turn each piece face down and let it cook for another 20 minutes or until you see they are well cooked but not yet too dry.

In the meanwhile wash the tomatoes carefully and cut them into small cubes. Add the garlic, the basil leaves cut into smaller pieces with your fingers, salt and the rest of extra virgin olive oil (2 tablespoons). Mix it all well and mix each now and then to mix the flavours well.

Place the eggplant slices on a serving plate and put a generous quantity of tomatoes over each of them. Enjoy and buon appetito!

This roasted eggplant recipe is a light and tasty recipe. Eggplants do not have many vitamins, but have a lot of fiber.

Complete the recipe with tomato facts regarding nutrition that are impressive. Rich in vitamin C and lycopene, it is a must on healthy meals.

Eggplants have a few calories, 20 for a cup. Tomatoes have 22 for 1 medium whole fruit. Each tablespoon of extra virgin olive oil only 90 and that’s all. You can even increase the oil amount if you are not counting calories, because it is a healthy unsatured fat, with so many advantages to our health (check here the benefits of olive oil).

As for all Italian recipes, the quality of the ingredients will make the success of your recipe. Choose the freshest vegetables you can buy and use good quality olive oil. Low quality oil brands usually mix different oils from different, and not qualified, producers from many countries. Choose quality for your body.
