Recipe for Mussels

Recipe for mussels: stuffed mussels are a wonderful starter idea for a seafood dinner. Amongst many baked recipes for mussels, I believe this is the best one.

Stuffed Mussels

Ingredients (4 people):

• 35oz/1kg of mussels;

• 1 cup of bread crumbs;

• 4 garlic cloves;

• 1 anchovy in oil;

• 3 red tomatoes;

extra virgin olive oil;

• salt;

• pepper;

• oregano;

• 1/2 cup of white wine.

How to prepare it:

Clean the mussels taking out the green string they have inside.

Put half cup of water into a pan that can contain the mussels, add salt, half lemon and a clove of garlic with its peel. When it begins to boil add the mussels, cover it and wait for the selfishes to be open.

In another pan add the extra virgin olive oil, the minced anchovy, the chopped garlic and the bread crums. Let them fry colouring the bread.

Take it out from the gas, add the tomatoes (peeled and cut in cubes), salt and pepper and mix it all well.

With htis mix stuff each mussell and place them on a oven pan with low borders.

Pre heat the oven to 356°F/180°C. Spread abundant oregano over the stuffed mix, put a thread of olive oil and cook it for about 20 minutes.

You decide if you want to prepare this recipe for mussels with both shells or if taking out the empty side shell before stuffing. In this case you will be able to gratinate better the stuffing. Otherwise you can stuff them and close again as you see on the picture.
