Pasta with gorgonzola

It may seem a strong taste, but at the end, it pleases everyone in my family! The pasta with gorgonzola is very easy to do and if you have a good red wine to drink together... wonderful evening!Italians are very demanding regarding pasta cooking time, and usually pasta cannot wait for the guests... but the opposite! Pasta with gorgonzola

With this recipe it's even more important. If you decide to do it using potato gnocchi (which I strongly suggest you), your guests or family can quite wait seat on the table, as gnocchi needs quite nothing to be cooked and this dish has to be served very warm.

Ingredients:

• 2 spoons of extra virgin olive oil

• 200gr of smoked bacon (cut in small cubes)

• 200 gr of a good quality gorgonzola

• 1 recipe of besciamella

How to do it:

First of all prepare your besciamella . Then put the water for the pasta to boil. Put the extra virgin olive oil into a small to medium pan and add the bacon pieces and let it melt. In the meanwhile, if the water boils and you choose a durum wheat pasta (that will last at least 7 or 8 minutes to cook) put the pasta to cook.

If you're doing gnocchi or a very fast cooking pasta, wait a while before putting it into the boiling water.

While the bacon melts, cut the gorgonzola in smaller pieces (don't worry about the shape, it will melt, it is only to help melting) and then add it to the bacon pan. Keep mixing it until the gorgonzola melts, and then add the besciamella and mix until it's warm. Turn off the gas and mix it well with your pasta. If you're using gnocchi be careful and add it on, while mixing energically could destroy the gnocchi.
