Pasta salad recipe

Pasta salad recipe, this easy pasta salad recipe is an excellent healthy lunch idea as it contains raw olive oil and fresh ingredients.

This is my favourite recipe for pasta salad. I use to prepare it often, especially during Summertime, even if it can be done all over the year.

You'll need (for 4 people):

• 4 tomatoes cut in cubes

• about 3 mozzarella (0.66lb at all)

• basil leaves

• garlic

extra virgin olive oil

• 0.88lb of short pasta

How to prepare:

While boiling the water, take a piece of garlic and "rub" it against the serving bowl. It will give aroma without leaving the garlic strong taste.

Add the cut tomatoes, the mozzarella cut in cubes, the basil leaves, salt and add abundant extra virgin olive oil and mix it all.

When the pasta is done, strain it with a colander and spread it with some cold water from the tap (the water will drain through the colander and will lower the pasta temperature, otherwise it could melt the mozzarella).

Then add the pasta to the tomato mix and mix it well. Leave it rest for a couple of hours if you have the time, mixing it once in a while. In case you don't have time to let it rest, no problem. It is good even ate while still warm.

Tip: Do not use buffalo mozzarella as it "waters" too much.
