Pasta Dough Recipe
This homemade pasta dough recipe can be easily done with a pasta machine. Making ravioli pasta dough is simple - the harder part is to place the suffing and be able to close them perfectly.
Ingredients: (1 kg/35oz/2.2lb)
• 4 cups of wheat flour • 3 eggs (you can use more eggs to have a more elastic dough, ideal for ravioli. With more eggs the stuffed dough won't open while cooking) |

• a little water just to tie the dough (it depends on how many eggs you use, the more eggs, the less water you will need)
Put the flour on a working table forming like a fountain. Inside it put the eggs. Begin mixing it with the fingers and then with both hands (or using a processor if you have it).
When the pasta is homogeneous, cut into smaller pieces and work each piece with the pasta machine Pass it through the machine beginning with the thicker grade to continue to work it and then begin to use the thinner ones until you have it thin enough to finalize. |

At this point, leave it entire if you are going to use it for ravioli or lasagna (in this case just cut in smaller sheets), or pass it through the tagliatelle row to cut it. |

If you freeze it, remember to add abbundant flour before putting it into the plastic bags.
