Pasta bolognese

Pasta bolognese means pasta from Bologna, the Italian famous city.

A traditional sauce to dress homemade pasta originally was born in Bologna - the famous ragu. This typical sauce requires a long cooking time and its main ingredients are meat (veal and pork) and tomato.

As it comes from Bologna, people began to call it bolognese even if people from Bologna don't do it! I asked a friend from Bologna about this sauce and he answered me that bolognese sauce doesn't exist!... in Bologna, because it's probably the most spread Italian recipe in the world.

As the real recipe of ragu from Bologna requires long time cooking, people began to cook it less and from this fact another recipe was born.

This recipe nowadays is more a tomato sauce with meat than a real ragu.

When I first tasted this specialty, I was surprised of how digestive it was, considering the 7 hours needed to cook it. It gets a rust color and is really so tasty.

A friend who cooked it that time used to let it on the very low gas and go to bed! It's very dangerous, but shows how much time is needed to make such a prelibacy. It's possible to do it during the day, without risking your life with gas!
