Parmesan cheese recipes

Parmesan cheese recipes are maybe the easiest ones...because the cheese by itself makes it all!In all these ideas I am using the "real" one, not a common parmesan, but Parmigiano Reggiano or Grana Padano, ok?

Parmesan cheese crisps

100gr of grated parmesan cheese (as said before you can use Grana Padano here)

Take a large pan (non stick ones? The ones that need no oil) and make about 3 or 4 (it will depend on the diameter of the pan) small circles with grated Grana Padano. Do not make them too thick nor too thin, as they are going to become a thin slice of crispy cheese

...that you can use to decorate your salads, as a side to soups, as a side for grilled meat and vegetables...and as simple chips to be eaten while having an aperitif ...healthy chips!

If you have a good "hand" cooking, you can make bigger circles, and as soon as you take them out of the fire (they will be soft), put them inside a small bowl to get the shape while it chills and use the basket to serve your salad in. It'll be a real success between your guests!

Parmesan cheese salad seasoning recipes

Fake Ceasar

you'll need:

1/2 lemon juice

3 spoons of extra virgin olive oil

1/2 minced garlic

yogurt (500gr)

2 or 3 alici

100gr grated parmesan cheese

salt

Put the lemon juice inside your mixer and as it runs begin to drop the extra virgin olive oil very slowly. It may become less liquid. Then add the 1/2 minced garlic, the 2 or 3 alici, the yogurt (about 500gr), the salt and the grated parmesan cheese. Mix them all and dress your salad. It serves about three or four salads and can be kept into your refrigerator for 4 or 5 days.

Natural

When you feel like having a different and healthy seasoning, just add to your leaves some salt, extra virgin olive oil and some Grana Padano grated cheese.
