Leftover ham recipes: if you have some sliced Parma raw ham in your fridge you can prepare this exquisite cuisine recipe. If you have cooked ham, try our “pasta panna e prosciutto".

Parma raw ham pasta

Amongst many leftover ham recipes, my favorite one is with Parma raw ham. This recipe fits much better with tagliatelle pasta. You probably have some shop where you can buy this kind of fresh pasta. Otherwise you can use the frozen or common ones.

Ingredients (4 people):

• 3 cups of durum wheat pasta;

• 1 cup of Parma raw ham in not so thin slices;

• 2 tablespoons of unsalted butter;

• 1/4 of a medium onion, minced;

• a sprinkle of white wine;

• about 4 tablespoons of grated Parmigiano cheese ;

• salt;

• pepper.

How to prepare:

Separate the fat from the meat. Cut it into small pieces and mince the fat together with the onion.

In a small pan, put the butter and add the minced onion and fat. As soon as it colours, add the ham pieces. After a while sprinkle with the while wine, let it evaporate and give it a generous grinded of pepper.

In the meanwhile, boil the pasta in salted water, and then mix it with the prepared seasoning and grated parmigiano.

If you want an Italian red sauce (it's even better), just add 0.66lb of pealed tomatoes and cook for an extra 15 minutes.

Pasta with cooked ham and peas - Pasta Panna e Prosciutto

Ingredients (4 people):

• 3 cups of durum wheat pasta;

• 2 tablespoons of extra virgin olive oil;

• 1 cup of cooked ham cut in pieces;

• 1 cup of cream;

• 1/4 of a medium onion, well minced;

• 1 cup of already cooked peas;

• about 4 tablespoons of grated Parmigiano cheese ;

• salt;

• pepper;

• nutmeg.

How to prepare it:

This is the most popular dish amongst leftover ham recipes.

Cook the pasta in salted boiling water. In the meantime put the extra virgin olive oil in a pan and add the minced onion. Let it cook in low gas until the onion becomes quite trasparent.

Add the ham and cook it in higher gas for a couple of minutes. Add the peas and as they begin to boil add the cream. Mix it quickly, add freshly grated nutmeg and pepper. Do not let it boil as the cream shouldn't reach high temperatures.

Just strain your pasta through a colander, mix it all and enjoy. Buon appetito!
