If you come to Rome and happen to eat in one of those typical tourist restaurants close to Piazza di Spagna or Colosseum, pay attention to how many of this tasty dish are served around you. Usually these restaurants are not the real ones, as are tailored for tourists, but I assure you that if you order this so famous traditional Italian dish ... you will have a good lunch! I tried to eat another typical roman food in these tourist restaurants with no success. I am talking about artichokes and chicory. These vegetables need to be really fresh, but this traditional pasta just need canned tomatoes, mozzarella (it lasts in the refrigerator for some days) and grated Grana Padano. The first pasta in Italy was called langane. In some small cities, people use to call it as pasta al forno that means pasta made in the oven. It's usually cooked on Sundays or in any special date.  | The pasta used for its basis is the simpler one, the same used to tagliatelle and ravioli, using flour and water. It's only "larger". It can be done at home easily, but there are also very good brands that are used by the old Italian mammas that give excellent results. |
As most of the people don't do it at home, what really means now is its seasoning. The new cuisine opened traditional dishes to new matches, allowing such a traditional plate to be seasoned using artichokes or pesto instead of tomato sauce. |
