Italian cheeses
begins to be known worldwide. Italy produces a wide variety
of quality cheeses that will certainly conquer your taste.
The most famous one
is
Parmigiano Reggiano, a healthy cheese that is ideal also
for childrens' diet, as it is produced without preservatives
and it is very rich in calcium.

Pecorino
Pecorino
is the known cheese done with sheep milk. It originates from
Sardinia and the known Pecorino Romano is partially produced here.
The rest of the production is made by Sardinians that emigrate to
Lazio hinterlands. Its special flavour and taste are the result of
uncontamined free pasture and environment where the sheeps
live in.

Smoked Pecorino
This cheese is
lighted smoked which gives it a special flavour. As for the
matured one, it goes perfectly with carasau bread, wet or
dry.

Ovinfort - 500gr/18oz
This is a Sardinian
gorgonzola that I classify between the best Italian cheeses. It is produced in small quantities and has a
fantastic taste. Perfect with wet or crispy
carasau
bread .

Goat cheese - 500gr/18oz
Made with goat milk from Sardinian
breedings, it has high quality considering the natural
environment, free of pollution, and the free pasture animals
have here. |

Peretta - 500gr/18oz This local cheese has
the same shape of cacio cavallo, but a sweeter taste. It is
good as it is, and is wonderful grilled on the barbecue or
using a non-adherent pan. Wrap it with a wet piece of
carasau bread and enjoy it with a good red wine.
Smoked Peretta - 300gr/10.8oz
Try also the smoked one. I like it in
small pieces as appetizer, while I am cooking lunch or
dinner. It is perfect also used to grill eggplants or any
other vegetable.

Salted ricotta
The salted ricotta has 50% less water
than the fresh one, and so can last for longer time. It can
be eated with Sardinian bread and also grated over a pasta
dish or used in many other recipes.

Creamy Pecorino cheese
This cheese cream was born
to match
carasau bread, but it is tasty with any bread.
Just spread it on bread, cracker,
grissini or whatever you prefer.

This delicate cheese cream made with
goat milk can be eaten as antipasto, as a snack or in a
cheese and wine evening.
