Italian Recipes

Italian recipes may vary between bordering cities. Italy has some bigger cities and a lot of small centres. Each one of these has its own traditions and… recipes.

There are italian recipes that can be considered “general”, and I will consider them for the major time, as differences between small cities often are dued to different spices or small details that may be difficult to follow being outside that “world”.

Pasta Recipes

Most of the time, when we talk about pasta recipe we mean not the pasta, but its sauces . Pasta shapes are interesting, but most of the time they are similar as taste (I am talking about dry pasta, it doesn't apply to fresh ones), and what makes a dish is its seasoning, its sauce. To begin cooking Italian, the first challenge is to make a good Italian tomato sauce .

The same for risotto recipes. Here you have different types of rice and different ways to cook it. I used to eat rice in Brazil, but risotto is really another thing. It’s much more than rice. And, take it easy, it’s not difficult to make an inviting italian food dinner even without cooking experience! You can even try a seafood risotto…

Traditional recipes

Italian recipes are infinite! I could name books and books with pasta recipes. Then risotto recipes… and vegetables! It’s a big challenge here: which is better, lasagna recipes or an eggplant parmigiana ? There are so many vegetarian recipes that it makes my mouth waters. I believe eggplant parmigiana is the one at the top, but what about stuffed zucchini ?

You need to know how to prepare a good besciamella in order to be able to make a delicious lasagna.

Many dishes are enriched with the typical broth , that is wonderful as a simple soup in cold evenings, enriched with a good Parmiggiano Reggiano.

Italian food is one of the main mediterranean diets, and even if italians eat a lot of meat, it’s easy to notice that there are less choices of recipes for meat, as it is not at the top of mediterranean diet pyramid. There are more fish instead, as mediterranean fishes are very tasty.

The other strong point of italian food is certainly its sweets or candies. There are so many…and so different between them! You certainly know tiramisu, and maybe zuppa inglese. But have you already tried a fresh amaretto?
