Well Paul, probably the most popular food in Italy is pasta. It's a very wide answer, as there are so many kinds of it, with so many different ways of cooking pasta that it is quite impossible to specify just one as the most popular.

In Italy, recipes vary from city to city, from region to region. Each place adds something typical from that territory, so that you find pork sausages with fennel seed and most of the ones made in Calabria contains strong pepper on it.
