Italian food vegetables

Italian food vegetables is not a right expression, as vegetables are not property of Italian cuisine. But Italians are used to search for the origins... and often find them to be Italian!

I cannot afirm which ones are originated in Italy or not. I just mean those that are so commonly used in Italian dishes to be considered themself typical the same!

Eggplant exists in many countries, but besides the Greek Mussaka, I do not know any other countries with famous recipes as the Italian ones.

Some years ago my sister came to visit me and we were invited to have dinner at a friend's house. I forgot to tell this friend that my sister didn't like eggplants...

Well, she prepared antipasto with eggplants, pasta with eggplants and grilled eggplants for main dish. Since then, my sister loves eggplants! Eggplant parmigiana is maybe the most known recipe. But you can cook eggplant in many different ways, grilled, "in pan", fried, and so on.

Eggplant has few vitamins, but a lot of fiber.

Another typical one is zucchini. The best recipe is the stuffed zucchini , but you can cook them also grilled, fried and in pan.

Red pepper is another commonly used vegetable in Italy. Pay attention because in Italy the word peperone (peperoni in plural form) means red pepper. The sausage that is commonly used in many countries called "peperoni" does not exit in Italy!

Broccoli is very used in Italian dishes. The most known recipe is with pasta , but it is used also inside calzoni, other than in salads and just boiled.Italian pasta with broccoli

The tomato (pomodoro) is probably the most used one. It is largely used for sauces , but also for salads and grilled dishes.

The many types of funghi existing in Italy allows a large range of recipes that goes from simple grilled ones to tagliatelle ai funghi that pleases even who is not fond of funghi.

Artichokes are another Italian delicacy. You can eat them with a raw salad or cook them in so many ways, as for example as a risotto.
