I had always thought that make bread was a difficult thing. I used to think that a common oven was not enough and many other common ideas.
Since I saw a focaccia bread recipe and decided to try it. I first tried warking the dogh manually. It was even tasty, but not as soft as I expected it to be. I tried a second time, working the dough harder, but got the same result.
Then I had a brilliant idea: to use my bread machine. I had already tried my bread machine recipies,but there were only a few and none were really special. I then discovered that the machine has a program just to work the dough, without baking it (I bake it on my "common" electric oven), and...since then, my family is fond of my artisan bread.
It was like opening a new chapter in my cooking book, as there are so many inviting Italian bread recipes. After getting in touch with it, you will surely be adding new ingredients and creating your own recipes.

I do not recommend you to work the bread dough manually. I tried it a couple of times and the yeast didn't work as it should. It needs hard work and it is pretty difficult to reach the desired amount of work doing it manually.
If I can do it, you surely can do it too! It can be a very pleasant time. I believe that prepare the bread is kind of magic. I love to see the transformation of the dough, specially if it is a recipe that uses yeast.

There's a yeast free bread that is my husband's favourite one. It is stuffed with cheese and I can assure you that you'll never have leftovers. It is also a very quick recipe.
Amongst whole grain bread recipes I use a simple one, as you have always to mix some other flour, because otherwise using only whole wheat flour keeps your bread from growing and it becomes too hard. The solution is to add some other wheat to have the best taste and results.
This focaccia recipe is the one I named before. You can enrich it with some rosemary or other herbs.
