Pizza, spaghetti,
tortellini... aren't they all alike? Not at all! As
you get in touch with Italians, you begin to notice
how different their traditions are depending on
where they come from.
When I came to live in Italy 25 years
ago, I was really surprised with the big differences in
cooking even between two small cities, just 7 km one another.
(“English is not my mother tongue,
so please forgive my accent!” )

The food culture in Italy is really...
culture. Nobody can deny it. It's part of italians' life.
It's unique and deserves attention.
Think about
pasta. It is known as an Italian specialty, but it came
from Arabian people. In Italy it was developed it so well that it
became an Italian typical product. There are so many types
of pasta that it is even difficult to find a complete list
of them.

Italian wine costs less than water in most
restaurants! I mean the “property one” (vino della
casa). A bottle of mineral water in a restaurant in
Rome costed me € 5, and a ¼
liter of red wine € 3.
The most important
wines have a wide range of prices, but you really have
good choices. The
Italian ones are at the first place in US market… and
there must be a reason for it.
But here in Italy people do not drink only
wine. Tasty and typical beverages are common for an
aperitif (another local habit) or after a meal,
as grappa or limoncello. |

I personally began to learn about this
cuisine culture when I got married and came to live in Italy (Sardinia).
I began to live closely to these traditions, quite making
them mine. I learned how to cook a “sugo” (tomato salse) and make pasta at home; so that I could open a small spaghetti
house in Rio while living there for a while.
| In Italy there are as many recipes as
small centres, and the curious thing is that they’re
jealous one from another!
You may say: ”Your pork sausage
reminds me the one I ate yesterday at dinner in … (close
city or centre)”. You’ll probably hear as an answer: ”No.
They use this spice (example) and we don’t. We use this
other one!” It’d be quite a fault to have the same recipe!
