Grilled Zucchini Recipe

I did really invented this grilled zucchini recipe one day I did not know what to cook for dinner and felt like eating light and healthy (as I do often).

I prepared a tuna tartare recipe and this grilled zucchini with the same dressing. That was the trick. They matched wonderfully and it was a healthy and tasty meal.

The dressing I am talking about is simple: just squeeze a lemon and put its juice into a small bowl. Add salt (I strongly believe it comes better using the gourmet salt Fior di Sale) and freshly

grounded pepper. Then beat it with a fork or, even better if with an egg whisky, adding a thread of good quality extra virgin olive oil until it becomes more dense.

You’ll need (4 people):
• 4 medium zucchini
• 2 medium onions – optional (better if you find the purple ones)

How to prepare:
Slice the zucchini and the onions (if you like them) using a mandolin food slicer and place them on a bakery paper on your oven pan. Try to separate them as much as possible. It doesn’t matter if you pre-heated the oven or not. Cook it until some zucchini begin to brown (this crispy parts will give the whole a special taste).

Use a kitchen brusher (better if a silicone one) to distribute the dressing on the zucchini and onion slices, just as you see me on the picture aside.

Using a brush will avoid you using too much oil and helps separating the zucchini from the paper.

Fior di Sale - it's the first salt that appears on the surface of a marine saline. It is hand harvested and it's considered the salt caviar, very appreciated by major chefs. It is raw, has less sodium and has no conservatives or additives at all. It is food as it contains mineral salts that common salt doesn't have.

Egg whisky - I have mine hung upon my kichen countertop, always ready to be used. It seems like my salad dressing does not come well if I beat it with a simple fork instead of using it.

Kitchen brusher - Mine is hung aside the egg whisky! It is so useful and once used to use it, you will not find a better solution when you need to spread beaten egg over a crust, spread marmelade on a pie, dress this grilled zucchini recipe, amongst other recipes.

Mandolin food slicer - I have always used it, since I was a teen ager. It is fantastic to slice anything from onions to cheese. I use it very often. I believe this grilled zucchini recipe cannot be prepared without having them thinny sliced with a mandolin.
