Gorgonzola Cheese Sauce

You'll need (4 people):• 4 cups of durum wheat pasta • 2 tablespoons of extra virgin olive oil •1 cup of smoked bacon (pancetta) cut in cubes • 1 cup of gorgonzola cheese cut in cubes • 1 cup of besciamella (lighter) or cream How to prepare: |

While the pasta is cooking, put the extra virgin olive oil into another pan and turn on the gas. Add the bacon cut in cubes and let it melt for a while.
In the meanwhile, cut the cheese in smaller pieces and add them to the bacon and oil mix. Let it melt, mixing with a wood spoon, then add the besciamella. Keep it warm, strain the pasta and mix it all. Enjoy!
You can try a new idea preparing a risotto with this sauce. In this case, prepare the Italian risotto without tomato and add the sauce when it is quite done, as the cooking time of bacon and gorgonzola cheese would be too short for the rice.
