Ingredients:
200g fresh vegetables (whatever you can get on the market)
1/2 small onion
1 tablespoon olive oil
500 ml vegetable stock
150g canned tomatoes
(in pieces)
100g Gnocchi
salt
pepper
tabasco
herbs (i.e. oregano, thyme, rosemary)
Directions:
Wash and peel the vegetables, then cut into small pieces. Peel onion and cut into small cubes.
Use a broadly based pot, heat olive oil and steam onions until yellow. Add veggies and brown lightly.
Add vegetable stock and tomatoes. Stir while bringing to a boil. Season with herbs, salt, pepper and tabasco to your liking.
Keep simmering for 10 minutes. Add Gnocchi and simmer for another 2 minutes.
