Frying Batter

Frying batter: prepare vegetable fritters, fried squids, eggplant and more with this batter for frying usually used in Italy.

It is very simple to do and can be used with salty or sweet food.

Using with salty food, depending on what you are frying, it's possible to add some grated parmesan cheese.

If you're frying sweet things, you can add some grated lemon peel.

You'll need:

• 2 cups of wheat flour

• 4 eggs

• 1/5 cup of oil

• salt

Italian frying batter

• 1 1/2 cups of beer

How to prepare:

Put the flour into a bowl and then add the yolks and the beer slowly. Mix it well until it becomes homogeneous. Leave it rest for at least half an hour.

Before using it, whip-up the eggwhites and then add them slowly.

You can use milk instead of beer, if you prefer. But you have better results using a pop drink.

Dip what you want to fry into the batter and then inside the boiling oil. You can prepare vegetable fritters (with eggplant, zucchini, green beans, mushrooms, artichokes, ecc), fresh cheese or fruit.

tip #1: The olive oil is good for frying because resists to high temperatures and have no smell, but has a strong taste that doesn't match with delicate food.

tip #2: Use abundant oil to fry, otherwise it overcooks.

tip #3: the smaller the food to be fried, the higher the temperature.
