Fried Eggplant Recipe
The best fried eggplant recipe is often the simplest one. These recipes for fried eggplant are pretty simple and the second one is a good choice also for kids, as it is enriched with eggs.
You'll need (4 people):
• 4 to 6 eggplants (depending on their size)
• salt
• 1/2 cup of wheat flour
• extra virgin olive oil to fry

tip: An old tric to eliminate the sour tasteis just cut each eggplant and put some salt on it (the normal quantity you use to cook). Put them into a strainer and leave them for about an hour. A dark water will be eliminate leaving them sweeter. (No problem if you don’t have the time. It’s not essential.) You just have to cut them in long slices and pass them on the wheat flour (salted) and then fry, preferably with extra virgin olive oil . |
After taking them out of the frying pan, put them on absorbent paper, as you should do with all fried food recipes, and…enjoy!
Fried eggplant recipe to prepare fritters

These eggplant fritters are my mother-in-law genuine recipe. It's one of those antique dishes used when people did not have money to buy meat and had to be creative with what their courtyards produced. |
You'll need (4 people):
• 3 medium eggplants
• 2 eggs
• about 1/2 cup of milk
• about 1/2 cup of wheat flour
• salt
• oil to fry (use extra virgin olive oil)
How to prepare:
Wash and cut the eggplants in cubes. Then cook them in boiling water and strain it through a colander.
Beat the two eggs and add a couple of tablespoons of wheat flour and about half cup of milk. Mix it well, it has to become a very homogeneous and soft cream. Add more wheat and/or milk if necessary. Salt it.
Squeeze the eggplants, mash it up with a fork and mix it with the batter.
Put abundant oil into a frying pan and put small portions of the mix using a tablespoon (one abundant tablespoon should be enough for each unit).
Leave them cook for a while, without touching them often, otherwise they will absorb too much oil. Then turn them to cook on the other side. When they are coloured, take them off and put them on absorbent paper and cook another ones.
