Freezing tomatoes and keeping their freshness and flavour to be used during Wintertime.

The best tomatoes are the seasonal ones, those which mature during Summertime and are so tasty that could be eaten with no dressings. The other qualities you find in the markets during Autumn/Winter are artificially grown using greenhouses and do not have the same flavor or taste.

To be able to prepare a fresh tomato spaghetti sauce whenever you feel like doing it, think about freezing tomatoes while they are at their best.

It is simpler than you may think and you will be more than satisfied when, during a cold evening, will be able to prepare a tasty ragu recipe with fresh and tasty tomatoes, spreading that wonderful aroma in your kitchen

If it is possible, buy organic tomatoes. Otherwise, wash them carefully to eliminate any chemicals. At this point you have two choices: peel them or leave them whole.

If you peel them, you will have them pretty ready to go into the casserole to prepare what you desire. In this case you have to make a light cut on their peel and dip them (4 each time) in boiling water for about 45 seconds and then into cold water to eliminate the peel

easily. Then cut the hard parts and eliminate the seeds.

If you decide to freeze whole tomatoes, when you take them out of the freezer, they will release the peel easily, especially if you use a food mill like I do. Personally I prefer this second choice as it is really simple and does not require half a day peeling and eliminating seeds.

Whatever way you choose, place the tomatoes on a paper tray (just to have a hard place to place them) covered with baking paper and put it inside your freeze until they become hard. Then put them inside plastic bags and close trying to eliminate the air inside. It’s better if you have a vacuum food sealer , that eliminates the air perfectly.

When you decide to use it, let them unfreeze and pass them through the food mill to eliminate peels and hard parts and it is ready to prepare your homemade tomato sauce recipe!

These tomatoes cannot be used in salads, but only for stews, sauces and soups, as freezing makes them mushy. But it does not matter regarding tomato nutritional facts, as lycopene is better absorbed when cooked.
