Focaccia Recipe

This focaccia recipe surely pleases all. Amongst focaccia bread recipes, it's an easy one that goes with everything. It is also the basis for most focaccia recipes.

You’ll need (4 people):

• 2 cups of wheat flour

• 1.25 cups of water

• 1 cube of yeast (0.06 pounds)

• 2 coffespoons of salt

• extra virgin olive oil

Put half of the wheat into the bread machine bowl and add the salt. Add then the rest of the flour (the yeast should not touch directly the salt).

Warm the water (just warm, not boil) and then melt the yeast inside it, helping it with a fork. Pour it into the bowl and turn your bread machine on to work the dough (pay attention: choose the program that will only work the dough, we don't want it to bake it).

Otherwise you can use a wonderful mixer, just as the one you see aside. It's on my wish list ;-)

I do not recommend you to work the bread dough manually. I tried this recipe a couple of times and the yeast didn't work as it should.

I then used the machine and it grew perfectly.

Prepare the oven pan covering it with oven paper.

After about 1 hour and a half, take your dough (pretty grown) and work it a little with your own hands just to free some air from it. Make small balls with the dough and place them on the oven pan covered with oven paper.

Warm your oven to its highest temperature (250°C or 482°F).

Leave the focaccia bread balls for about 5 minutes and then, using your fingers, mash them up giving them a round shape.

Put some good quality extra virgin olive oil into a small bowl and use a kitchen brush to spread it over each focaccia. Then add some salt (better if freshly ground or Fior di Sale) and, if you desire, some herbs like rosemary, oregano or others.

Put them into the oven for about 10 minutes. They will be ready when lightly coloured. Enjoy it with butter, smoked salmon or just as it is.
