Easy Meatloaf Recipe

This easy meatloaf recipe will delight you and your guests. This basic meatloaf recipe needs a few ingredients and it's one of the most easy to prepare.

This popular Italian food dish was born as one of those poor recipes meant to use leftovers. It doesn't mean it is not good, but the opposite. It is another one of those poor but so tasty typical dishes that became part of the history of Italian food.

Ingredients (4 people):

• 2.75 cups of ground meat (veal or beef)

• 0.4 cups of mortadella (minced)

• 2 eggs

• 0.4 cups of grounded bread

• 1/4 cup of grated parmesan cheese

• salt

• pepper

• oil to fry

• tomato sauce

• 8 slices of mozzarella

How to prepare it:

Put all the ingredients (leaving 1/3 of the ground bread for after) inside a bowl and mix them all well. You can choose between doing one big meatloaf or dividing it in 4 pieces (individual portions).

Take it (or the single ones) and pass them on the remaining ground bread and then fry it (or them) on both sides, taking care of not punching it with the fork, but using maybe a wood slice.

Put less than half tomato sauce on a pan that can go into the oven. Then place the “polpettone” on it and put the slices of mozzarella on it (or 2 slices per piece if you made individual ones).

Cover it all with the remaining tomato sauce and put it into the oven (200°C - 392°F) until the cheese melts and gets a little coloured (just a little to avoid drying it too much).
 
Take it out of the oven and serve. Isn'i it a real easy meatloaf recipe?

Tip: you can freeze it after frying. When you decide to eat, just take it from the freezer, add the mozzarella and the tomato sauce and put into the oven.
