Bolognese Sauce Recipe
Bolognese sauce recipe: amongst spaghetti meat sauce recipes, this is the most used one.
It originates from the traditional “ragu”. This Italian meat sauce requires a long cooking time and its main ingredients are meat (veal and pork) and tomato. As it comes from Bologna, people began to call it bolognese even if people from Bologna don't do it! I asked a friend native of this city about this recipe and he answered me that it doesn't exist in Bologna! They know very well ragu, and the rest of the world call it as the typical dish of this city. It's really curious, as it is probably the most known Italian dish in the world. |
The bolognese sauce recipe is ideal for lasagna, eggplant parmiggiana and stuffed zucchini. It is one of those healthy dinner recipes, as you have a complete meal with one dish - the proteins from the meat and cheese, plus the carbohydrates of the pasta and vitamins from the tomato. |

Ingredients (4 people):
- 4 tablespoons of extra virgin olive oil
- 2 cans of peeled tomatoes - each can 14 ounces (if you have the time and the patience to use fresh tomatoes ... peeled!)
- 1 minced onion
- 2 minced garlic cloves
- Chopped parsley
- some fresh basil leaves (If you don't have any, don't worry. You can use dry leaves or don't add basil at all. You can add it during cooking time or at the end, to keep the flavor fresh). Italian tomato sauce matches well with some aromas, such as basil, parsley, oregano and more. Use dried ones if you cannot have them fresh.
- salt
- 1 medium minced carrot
- a stalk of minced celery
How to prepare it:
Put the oil in a pan (it's better to use a "deep" pan, to avoid splashing), turn on the gas and add the minced onion. Leave it for a while, stirring to avoid overcooking and then add the minced garlic, and stir for some minutes.
Then add the carrot, celery and parsley, and stir for another couple of minutes. After browning for a while add the peeled tomatoes, cut into medium pieces (don't bother in cutting them in cubes as they are going to split while cooking).
Mix all the ingredients and leave on high heat for a while. As the mixture begins to boil, regulate the gas to prevent overcooking but leave on medium heat for a while. Otherwise you'll get a "too liquid" tomato sauce and a good one should be dense. Stir every now and then.
Your bolognese sauce recipe will be ready in about 60 to 90 minutes. You'll notice that it becomes like a whole cream, and while stirring you can quite see the bottom of the pan.
