Bechamel Sauce Recipe

How to make bechamel sauce recipe with ease. With this basic recipe besciamella sauce will be prepared easily and will have no more secrets for you.

This is the besciamella my mother-in-law uses to prepare her wonderful lasagna. She prepares also a homemade tomato sauce and makes layers of pasta sheets, bechamel sauce, tomato sauce, pieces of mozzarella, grated parmesan and another layer in the same order.

This recipe is very simple to prepare and can also be used when you need to cook something au gratin, as it is

neutral and complements both meat and fish and almost any other dish.

For 4 people:

• 2 cups of milk

• 3 tablespoons of wheat flour

• 1 yolk (optional)

• 1 tablespoon of butter 

How to prepare:

Place the milk in a pan and add the butter and the flour (also the yolk if you wish to include it).

Turn on the gas (medium) and begin to stir, taking care to dissolve the flour to form a smooth cream.

Keep stirring until it becomes a creamy consistency. Then turn off the gas and add salt and nutmeg. The sauce is now ready to be used in any recipe of your choice.

Some people use to fry the flour with the butter, then adding the milk slowly. Personally I don't like doingnthis way because it often comes out with flour balls in the middle of the cream. Maybe I just did not practice that much, but I assure you that preparing it as I suggested will result in a soft and homogeneous cream that will enhance your recipes.

If you add cheese to your bechamel sauce recipe, it will become the famous Mornay French sauce (I use to add grated Parmesan cheese to it and then use it to cover salmon trout filets before cooking it into the oven for about half an hour).
