
Baked Eggplant Recipe

My husband loves this way of cooking eggplants.To have a good result it would be better to find the smaller ones, better if organic or local (the biggest ones aren’t the best as they grew too much and absorb oil while cooking, and sometimes leave water during cooking time). You just have to wash the eggplants, cutting off the hard leaves and put them into the oven at medium temperature until they are done (try with a fork and they are done when they are soft and deflated - about 1/2 hour).
In the meantime prepare a mix with minced parsley, minced garlic, salt and a good extra virgin olive oil and put it into a small bowl. Take it to the table and each one will open the own eggplant and add the mix.
This baked eggplant recipe is served here in Sardinia with the local Sardinian bread
(this brand sold by Amazon is produced in a small city from where my husband's relatives come from. I use to buy it often in my market here) . It is served wet (yes, just pass it under the tap) so that it becomes like e piece of fabric and then serve to enroll each bite of eggplant. If you don't have it, buy good bread to eat together.

This baked eggplant recipe can be a complete dish for your dinner, as the cheese gives the protein part and the olive oil the fat (good fat) you need to your healthy diet.
Turn on your oven and cut the eggplants in two, in the long way. Place them on the pan, face down, and let them cook for about 20 minutes.
In the meanwhile cut the tomatos in slices or cubes, as you prefer. Then take the pan out of the oven, turn the eggplants with the black peel onto the oven and then dress them with garlic, parsley, salt, pepper and extra virgin olive oil. Add the tomatoes on each of them and add some more oil, and finish with the cheese slices. Take it to the oven for another 15 minutes and it is ready to eat.
