Authentic Italian Recipes

The authentic Italian recipes for me are not those written on international recipes books, but are those daily prepared by common women for their family and friends.

These are those recipes they learned naturally, just watching their moms cooking for the family. These are those dishes that really pass from one generation to another, naturally.

Many authentic Italian recipes cannot be prepared without a besciamella sauce. Besciamella is the Italian translation of bechamel. It's a sauce that can be used in many famous Italian dishes as lasagne and in many home-made pasta recipes.

If you are fond of risotto recipes, you already know that it needs broth, better if home-made broth. It is also a good meal choice for a cold day, served with small shaped pasta and grated parmesan cheese.

Broth or stock is one of the most used authentic Italian recipes, as it is the basis of so many other preparations.

Amongst authentic Italian recipes, there is a traditional meat dish called “polpettone”. This meatloaf recipe (you can always prepare individual ones) that can become a single dish if you add mozzarella, homemade tomato sauce and pasta with butter.

I use to prepare it in individual portions that looks very inviting when served, having the melted cheese covering it all together with the tomato sauce. You can serve it as Italians do, with a salad or potato side; or you can serve as non-Italians do, with some pasta as a side, making a complete and satisfying meal.

This recipe for chicken parmesan is the one I used to eat since I was a little girl. It is one of those "foreign" authentic Italian recipes, as you will find it anywhere around the world, except in Italy. Italians cook the breaded chicken breast (Cotoletta alla Milanese), prepares the tomato salse and produce great mozzarella - but they eat them separately.

I remember family lunches in Italian restaurants when I often choose chicken parmesan together with my cousins. It was so inviting, with all that melted cheese covering it all. I used to eat it with mashed potatoes, but it is often served with french fries.

We cannot talk about Italian food vegetables without mentioning red peppers! Pay attention, because in Italy the word peperone (peperoni in plural form) means red pepper. The sausage that is commonly known in many countries called "peperoni" does not exist in Italy! AMongst authentic Italian recipes we couldn't miss one prepared with peppers. It is largely used in whole Italy, especially in the Southern.

Try this exquisite stuffed peppers recipe. I prefer the red pepper, even if the yellow one is sweet too. The green type uses to have a stronger taste.
