Almond Brittle Recipe

I use to prepare this almond brittle recipe adding also hazelnuts and I can assure you it's a fantastic candy that never fails.

This is a very simple brittle that can be prepared just an hour before eating it.

It is also very healthy, as I use fructose instead of castor sugar and the benefits of this dry fruit are known (promotes lower cholesterol levels, prevents heart disease, help with weight loss, have good amounts of magnesium, potassium, zinc, iron, fibre and contain more calcium than any other nut which makes them great for vegans who do not eat dairy products).

Put the fructose together with the oil and the water into a non-adherent pan and mix it well. Let it boil and then add the nuts.

Keep mixing with a wood spoon until the caramel becomes dark and you see the whole begins to detach from the pan.

Prepare a flat pan or just use the reverse part of a non-adherent pan and cover it with a thread of oil, maybe using a pastry brush (to avoid attaching the caramelised nuts).

Pour the boiling mix on the oily surface and let it cold. Then just cut it into pieces and...buon appetito!
